LCBO Vintages Classics Release
Six hectares of 35 year old vines grown in schist, sandstone and sand contribute the Chenin Blanc fruit for this wine. Fermentation takes place in stainless steel fermentors to preserve purity of fruit flavour and the wine rests for 9 months on the fine lees to build mid-palate richness. It will drink as a youthful wine for 5 years and in great vintages, can age for 20 years emerging as a spectacular mature white wine.
“Florent Baumard grows this chenin on 15 acres of shale and sand over sandstone. The flavors touch on cool apple notes and soil-driven earthiness, but the wine is mostly about texture, luscious and deep, integrating some residual sugar so that it feels round but tastes savory. A pleasure to drink now, this will age well over the next five years.”
