LCBO Vintages Classics Collection
Composed entirely of Chardonnay from Grand Cru vineyards around the village of Aÿ in the Vallée de la Marne. The vines grow in in mineral-rich clay, limestone, and chalk soil that retains the day’s heat through cool nights. This non-vintage blanc de blancs highlights the unique character of the terroir rather than the qualities of a particular year, and is somewhat unusual as the product of a region best-known for Champagne dominated by Pinot Noir.
Grapes were harvested by hand in September of 2012 and vinified by vineyard parcel in small tanks. It was bottled for the second fermentation around six months after harvest and aged on lees for three years prior to dégorgement.
“Though Aÿ is generally a pinot noir town, the Chiquets grow a distinctly fragrant chardonnay in its chalky soils. The green apple scent is tight and earthy, while the flavors are pure, with a pristine, chamomile-flower length. Firmly structured, it feels cool, zesty and tense.”

“Green-gold. Sexy mineral-tinged aromas of ripe pear, nectarine, orange and buttered toast, with a hint of smokiness in the background; seems like there’s some oak here but there’s none. Smooth and fleshy on entry, then tighter in the middle, offering intense citrus and orchard fruit flavours underscored by a gingery nuance. Closes sappy and long, with building floral character and firm mineral bite.”
