LCBO Vintages Release
Grgich Hills grows Sauvignon Blanc grapes in their American Canyon and Carneros vineyards in the southern tip of Napa Valley, near San Francisco Bay. The clay soils retain water, allowing the winery to dry farm, and the cool climate slows ripening and retains acidity, so grapes develop a crisp liveliness that is impossible to achieve in warmer areas. All vineyards are farmed naturally, without artificial pesticides or herbicides, and they are Certified Organic.
Relying on naturally-occurring yeasts, 80% of the grapes are fermented in French oak casks called foudres, with the remainder in previously used small French oak barrels. We then aged the wine six months on its lees in neutral barrels. The combination of the fruit and the process produces juicy tropical fruit and lemongrass flavours with a touch of minerality at the end of a long finish.
