Grgich Hills grows Sauvignon Blanc grapes in their American Canyon and Carneros vineyards in the southern tip of Napa Valley, near San Francisco Bay. The clay soils retain water, allowing the winery to dry farm, and the cool climate slows ripening and retains acidity in the fruit, so grapes retain a crisp, lively quality that is difficult to achieve in warmer areas. All vineyards are Certified Organic, farmed according to biodynamic principles, without artificial pesticides or herbicides.
Relying on naturally-occurring yeasts, 80% of the wine is fermented in large French oak casks called foudres, the remainder in small old French oak barrels. The wine rested on lees for six months following fermentation. The combination of the fruit and cellar practice (which resembles practices commonly reserved for Chardonnay production) produces the fumé style of Sauvignon Blanc that is instantly recognizable. It’s a modern classic. Bright, juicy tropical fruit and lemongrass flavours from cool-climate fruit are bolstered by rich texture from barrel fermentation and a touch of smoky minerality.
