To make this rich white, the must was cold-macerated on the skins for eight hours, which enhances the Verdejo’s characteristic aromatics. Following a cool, slow fermentation, the wine remained on the fine lees, which develops structure and depth.


The finished wine is intensely aromatic with ripe apple, white pear, tropical fruit, notes of fennel and hay, and a background of white flowers. The palate is fresh, elegant, smooth, and well-structured, complex and persistent through the finish with pleasant bitter notes, as is typical of this variety.
