Le Clos des Hospices, a vineyard that produces Grand Cru Les Clos-appellated wines, has been owned exclusively by the Moreau family since it was purchased by Christian’s grandfather in 1904. The parcel of land, named for the old Chablis hospital (Chablis hospice) faces south, and benefits from soil rich in kimmeridgien marl and dense white clay.
Fruit is hand-harvested in small trays to avoid crushing, sorted by hand, and pressed in a gentle pneumatic press. Following a slow, cool fermentation in stainless steel, the wine is aged in French oak barrels (largely second or third-use) for four months and in bottle for 12.
