Paul Hobbs’s Napa Valley Cabernet delivers exceptional depth by sourcing fruit some of the Valley’s best vineyards: Nathan Coombs Estate, State Lane, and Flat Rock.
Produced using hand-harvested fruit, picked at night when the berries are cool, Hobbs’s Napa Cabernet is a showcase for some of the valley’s best vineyards. Following a five-day maceration, the wine was fermented by native yeast in open-top stainless steel tanks. It went through spontaneous malolactic fermentation after being racked to barrels. Following 20 months maturation in French and American oak (61% new), the wine was bottled unfined and unfiltered.
This is a stately Cab, deep crimson in colour with a luxurious perfumed nose: red currant, boysenberry, cedar, and herbes de Provence. The palate introduces layers of cassis, graphite, blueberry, and sage. Seamless, velvety tannins frame a long, elegant finish.
