Domaine la Meulière

Nicolas and Vincent Laroche are independent winegrowers located in the village Fleys, 4km from Chablis. Together, they represent the ninth generation of winegrowers, with their family’s winegrowing history dating back to 1779. The La Meulière estate covers 27.3 hectares and has Haute Valeur Environnemental 3 certification, harvesting is done entirely manually, and they use a natural approach to vinification.

The geology around the estate is characterized by Kimmeridgian clay-limestone soils. The synergy of this terroir with the Chardonnay grape provides the wines with minerality, power, floral and fruity aromas.

The farm’s 34 plots interlock like pieces of a puzzle, half of which have been inherited from ancestral family. They are spread over the communes of Béru, Chablis, Chichée, Fontenay and Fleys (all entirely on right bank of the Serein). The vines here have an average age of 32 years.

Domaine la Meulière make their wines with no additives apart from a minor stabilizing dose of sulfites and fermentation is carried out with indigenous yeasts. At each stage of the winemaking process, everything is done to preserve the integrity of the grape.

In the cellar, Nicolas combines traditional techniques with modern equipment to craft age-worthy Chablis. Most of the wines are fermented in stainless steel with temperature control. Beside the classic range, Nicolas is experimenting with several special cuvées, varying oak type, ageing length, and winemaking technique.
