“Ontogeny” is a blend of the single-vineyard Cabernets that Russel Bevan specializes in. Bevan claims it’s the most difficult of his wines to craft. Each component that he chooses to add needs to earn its place and enhance the flavour, aromatics and texture in the final wine.
The resulting wine is colossal, a behemoth, yet drinkable. At more than 16% alcohol, it’s not for the faint of heart. A dark, inky, profoundly deep wine with the deep clay and loamy soils of Oakville’s terroir coming through in detail.
