“Ontogeny” is a blend of the single-vineyard Cabernets that Russel Bevan specializes in. Fruit for the blend is sourced from vineyards in Sugarloaf Mountain, Sage Ridge, and Wildfoote, but the core of the fruit comes from blocks 5 and 7 in the Tench Vineyard. Bevan claims it’s the most difficult of his wines to craft. Each component that he chooses to add needs to earn its place and enhance the flavour, aromatics and texture in the final wine. This is a true, barrel-selection wine and highly anticipated year after year.

The 2021 vintage is showing so massive on release that it’s giving us 2018 vibes. Prominently Cabernet Sauvignon, it shows massive power and is one of our darkest Ontogeny bottlings ever, yet it still retains its complexity with the Merlot and Cabernet Franc additions. Vibrant blueberry, boysenberry and  créme de cassis with super concentrated fruit, and with the weight and tannin in the back palate that will allow this wine to age gracefully. Deep, dark and powerful.

Competing with wines 2-3 times its price (if not more), it reveals a deep purple hue as well as an exuberant, full-bodied, concentrated style carrying loads of cr me de cassis, tobacco, violets, charcoal, and graphite-like aromas and flavors. Super-rich, opulent, yet flawlessly balanced, with silky tannins, you should buy a case of this if you can. It should have at least 10-15 years of prime drinking.”
