Quite simply, the Coeur de Cuvée is one of the great values in world-class wine. It rivals Krugs and Dom Perignons for quality at a fraction of the price.
Vilmart produces its exuberant Champagne with hand-picked organically-grown fruit from its own Premier Cru vineyards. The Coeur de Cuvée comprises 80% Chardonnay and 20% Pinot Noir from the chalky terroir of Rilly-la-Montagne. During production, a rigorous selection is made of first press juice. The core wine did not go through malolactic fermentation, was fermented and aged for at least ten months in oak barrels, and went through extended aging in bottle.
“The 2015 Brut Coeur de Cuvée is a pretty dense wine that belies its deceptively mid-weight structure. What surprises me most about the 2015 is how closed it is. In most years, especially warm years, Coeur de Cuvée is quite a bit more open and voluptuous, but the 2015 does not come across like that at all. Rather, it is super-classic in bearing, with tons of gravitas from the 60-year-old vines just waiting to emerge. There are non of the awkward herbal notes that penalize so many wines. Bright saline notes extend the finish effortlessly. The 2015 is a brilliant Coeur de Cuvée.”

“Fragrant, with wafts of lime blossoms and exotic cardamom, anise and saffron spices, this weaves a firm streak of racy acidity with a satiny texture and finely detailed notes of crushed blackberry, ripe yellow peach, blanched almond and a crackle of fleur de sel, which lingers on the lively, lasting finish.
