In the town of Savigny-les-Beaune, the Premier Cru of Dominode is located on the Mont Battois side, which tends to have sandier and less stony soil, producing wines that are more earthy, sauvage and structured. It is named after the Latin “Dominus”, “Vineyard of the Lord” – an indication that this area was formerly owned by the Lord of Savigny. The vineyard is oriented North East, on a mid-slope.
Vinified 100% whole-cluster to extract more color and boost structure and aromatics, the wine sees malolactic fermentation on the lees and restrained oak influence over 16 months of aging in casks.
Notes of violet rose on aromas of ripe red berries, cherries with a subtle woody note. Beautiful intensity, velvety texture. Lots of freshness on the finish.
“Chalky soils from the midslope. Wonderful summer pudding fruity nose. Intense, concentrated palate with fresh acidity and lovely defined structure. Great intensity here: lovely fruit and fine structure.” 93 points, Wine Anorak, December 2021
“The 2020 Savigny-Dominode 1er Cru has a fresh bouquet with fine delineation, leaning more towards the red side of the fruit spectrum, touches of musk filtering through the cranberry and strawberry, a little earthiness with time. The palate is well balanced with pliant tannins, the whole bunch here neatly integrated with a judicious touch of white pepper towards the finish. This works much better than some of Chanson’s other reds and it should age well in bottle.” 90-92 points, Neal Martin, Vinous Media, December 2021
“Enough wood to notice sets off the spicier though equally earthy aromas of plum, dark pinot fruit and discreet violet nuances. There is very good energy and better refinement if not the same mid-palate density to the palate coating, balanced and youthfully austere finale. Note that this is sufficiently structured to reward a decade plus of cellaring.” 89-92 points, Burghound, April 2022
