Domaine des Hâtes

Domaine des Hates is a family estate located in the north-west sector of Chablis in the village of Maligny, run by Pierrick Laroche, Chablisien winner of the 2021 Young Talent Trophy from the Burgundy Report. Under the direction of its young winemaker, Domaine des Hates is committed to sustainable practices – discontinuing the use of pesticides and minimizing fungicides. The winery’s cellars are built into the side of a hill, enabling much of the work to be done by gravity. Vinifications are done classically in stainless steel tanks with some of the Premier and Grand Cru wines aged in used barrels for a small portion of each cuvée where the wines undergo full malolactic.

Vau de Vay (from the Latin vadum – “damp place” or “bog”) is a left-bank Climat, with soils of Kimmeridgian marl that provide the basis for a classic Burgundian style. The climat’s Southeast exposure permits sunshine only in the mornings, and a cool north wind ensures that climate and wines alike are cool and crisp, with tense energy that allows them to be enjoyed young or aged for years.
