In keeping with the classic style of the appellation, Domaine Gautherin’s Chablis is vinified entirely in stainless steel to maintain the crisp minerality of its terroir. The wine is then aged for 10 to 11 months on its fine lees, developing texture and depth while preserving freshness. The result is a refined and elegant wine with a floral, fruity nose, followed by a generous palate offering notes of fresh peach, pastry, and cream, underpinned by vibrant acidity and a mineral backbone.
This Chablis is a natural partner for scallops, fresh or seared, served over green pea purée. It also shines alongside soft, mild cheeses such as Brie or Camembert, or as a refreshing aperitif with oysters or shrimp cocktail.
