ChaĢteau de Thauvenay is one of the rare chaĢteaux in the Sancerre area. Its 18 hectare vineyard is entirely grouped around the chaĢteau on a magnificent terroir dominated by limestone. With controlled yields between 60 and 65 Hl/Ha, the estate fruit is harvested in the early morning to preserve freshness then undergoes pneumatic pressing. Maceration in small thermo-regulated stainless steel vats with pumping. The wine is then matured on fine lees until bottling in the spring.
