Paul Hobbs’s Napa Valley Cabernet delivers exceptional depth by sourcing fruit some of the Valley’s best vineyards: Nathan Coombs Estate, State Lane, and Flat Rock.

Produced using hand-harvested fruit, picked at night when the berries are cool, Hobbs’s Napa Cabernet is a showcase for some of the valley’s best vineyards. Following a five-day maceration, the wine was fermented by native yeast in open-top stainless steel tanks. It went through spontaneous malolactic fermentation after being racked to barrels. Following 20 months maturation in French and American oak (roughly two thirds new), the wine was bottled unfined and unfiltered.

This is a stately Cab, deep crimson in colour with a luxurious perfumed nose: red currant, boysenberry, cedar, and herbes de Provence. The palate introduces layers of cassis, graphite, blueberry, and sage. Seamless, velvety tannins frame a long, elegant finish.

Sourced from various Coombsville sites, this blend of 85% Cabernet Sauvignon, 7% Cabernet Franc, 6% Petit Verdot, and 2% Merlot is teeming with minerality, baking spices, toasted cedar and rich red berry aromas. Impressively vibrant, unfolding with fragrant rose petal contrasted by fresh gravelly tones. A dusty tannin backbone is framed by firm acidity, while the round fruit profile is almost buoyant. This will develop lovely complexity over time.”
