Calera

In 1975, legendary vintner and pioneer Josh Jensen founded Calera (Spanish for “lime kiln”) high in the Gavilan Mountains of California’s majestic Central Coast. In the four decades since, Calera has helped establish the Central Coast as one of the New World’s most exciting wine regions, while earning acclaim as one of California’s iconic wineries. Sourced from some of the appellation’s finest vineyards, the Calera Central Coast Chardonnay has become a benchmark for the region, balancing lush richness with beautiful minerality and bright citrus flavours.

If you’ve ever been in Central California, for example Monterey, you know how it can be incredibly sunny and warm, while at the same time the winds off the Pacific can drop the temperature in a second. Nights are downright chilly. Grapes love this – lots of sun to develop sugars and flavours, and moderated temperatures to help develop acidity.

While the appellation on the label reads “Central Coast” 39% of the fruit comes from Santa Maria Valley Valley, 34% from San Benito County, 17% from Monterey County, and 10% from Arroyo Grande, all exceptional places to grown Burgundian varietals. Blending across varied appellations bring a new level of complexity and the winemakers can build a sense of harmony in the wine. The wine was aged in 100% French oak barriques, only 5% of which were first-fill.

This wine displays enticing aromas of lemon zest, green apple, cedar and passionfruit. On the palate, mouth-coating waves of tropical fruit are balanced by a beam of natural acidity, with French oak-inspired hints of toasted brioche emerging on the finish. Deliciously complex, this will pair beautifully with a buttermilk-brined roast chicken and creamy scalloped potatoes.
