Introducing The Organized Crime’s first commercial release of a skin fermented white, aka ‘orange wine’! Living somewhere in the wild and wonderful world between red and white wine, Sacrilege can be enjoyed in place of either, at the dinner table or on its own.
Sacrilege started with a ‘starter culture’ of Pinot Gris grapes that began fermenting with wild yeast. Shortly afterwards, handpicked and gently destemmed whole berry Gewürztraminer and Riesling were layered on top of the fermenting Pinot Gris. After fermenting for 12 days with only a few gentle hand punchdowns, the grapes were pressed and allowed to finish fermenting in tank and neutral puncheon. Half of the wine underwent malolactic fermentation in barrel.
The nose is complex and evolves with time in the glass, revealing a wide spectrum of aromatics. From peach, lychee and citrus, to bergamot tea and tarragon, every sniff uncovers a new surprise. The palate is equally complex with the richness of Gewürztraminer, tempered by the cleansing acidity of Riesling, and a hint of tannin that adds texture.
