“Salix” is a white blend of white Grenache, Macabeu, and Pedro Ximénez. The vines are planted on the hills of “llicorella”, Paleozoic laminar slate, at an altitude of 350-450 meters above sea level. Grapes are harvested by hand in small crates and sorted meticulously upon arrival at the winery. 50% of this wine is fermented in a French oak barrel with 3 months aging and 50% is fermented in stainless steel tank with 3 months aging on lees.
“Very light yellow apple with a hint of white pear and dried apricot, green tea leave, and a good deal of toasted peppercorn, on top of light barrel spice. Chewy and fresh on the palate, holds good width without sacrificing length, acidity a touch unbridled in the finish, but otherwise fresh with potential to evolve.”
