The Organized Crime is a small boutique winery located on the renowned Beamsville Bench of the Niagara Peninsula. Their south-facing vineyards hang over the hillside edges of the Bench which provide an ideal environment for cool-climate wine growing, and some of the best views on the Bench.
Riesling grapes are handpicked and whole bunch pressed at harvest. Older neutral foudres are used to ferment the juice with the wild yeasts. After fermentation, the wine is left to age on its lees for nine months before bottling. This lees aging in neutral barrels contributes layers of texture and body to the wine, without adding any barrel taste or aromatics.
The nose is an aromatic mix of lime, sweet hay, clover honey and beeswax. The palate is mineral, and crisp acidity is balanced out by a little natural sweetness. The Wild Ferment Riesling is a great expression of Beamsville Bench vineyard soils.
