This Chardonnay is produced to be an unobscured and unadulterated example of the limestone terroir of the Beamsville Bench.

The grapes are hand harvested, whole bunch pressed, and fermented with wild yeasts in neutral oak foudres. The wine is then kept on lees for 8 months, with no battonage.

The result is a shy wine, with notes of lemon zest, tart apple, and an oyster shell, saline minerality. This wine is complex, with ample acidity and classic Niagara tension.
