Domaine des Hâtes is a family estate in Maligny, in the northern sector of Chablis. Although the family had farmed vines for generations, Pierrick Laroche launched the domaine’s first commercial vintage in 2010 after his father had long sold fruit to La Chablisienne. Since then, the estate has earned a strong reputation for precise, terroir-driven wines, with a focus on sustainable farming and a gravity-fed cellar.
Fourchaume is one of Chablis’s most celebrated Premier Cru sites, and L’Homme Mort is one of its best-known climats, planted on the right bank near Maligny. This sector is prized for its sunny exposure and pronounced limestone character, which help give the wines both generosity and classic Chablis minerality.
The 2023 bottling is made with 100% hand-harvested Chardonnay grapes, fermented for 15 days in stainless steel tanks to preserves freshness. The wine is then aged for 18 months in a mix of 65% stainless steel and 35% old French oak barrels. The result is a Premier Cru Chablis with citrus, orchard fruit, oyster-shell minerality, and a subtle saline edge, all carried by bright acidity and a long, focused finish.
A natural match for fresh oysters, seared scallops, or roast halibut in a beurre blanc, this is also an excellent bottle for roast chicken with tarragon or a creamy veal dish.

The palate is well balanced with a slightly viscous entry, a keen line of acidity, good density and weight.
