Domaine Violot-Guillemard is a small, family-run estate based in Pommard, with a deep-rooted commitment to low-intervention, organic viticulture and expressive, site-driven wines. The domaine has been practicing organic farming since 2000, and is currently in the process of formal certification with Qualité France. With a history of traditional craftsmanship and minimal manipulation, the wines of Violot-Guillemard speak with quiet precision and unmistakable Burgundian soul.
La Platière is a small but exceptional Premier Cru site perched on shallow limestone-clay soils, with south-facing exposure and scattered flat stones that lend the vineyard its name. The vines date back to 1936, with an additional parcel planted in 1982. The wine sees 50% whole bunch fermentation, partial aging in ceramic, and 14 to 18 months in oak, half of which is new. The resulting wine is a striking mix of structure and perfume—floral and mineral-driven on the nose with subtle graphite tones, followed by a vivid, tightly coiled palate of bright cherry, fine tannins, and excellent depth. A beautifully serious Pommard with aging potential.
Pair this wine with seared duck breast, grilled quail, or truffle risotto. The vibrant cherry fruit and firm tannic backbone will stand up to richly flavoured, earthy dishes.
“Two samples were offered, the first from new wood. Bright and shiny ruby colour. More fruit than spicy, a certain strictness. Pepper at the back. The second from Clayver porcelain tanks had a paler crimson colour and much less nose, because less volatile. A gentler raspberry and strawberry fruit in the mouth, slightly gentler on the pepper. Longer finish. Neither has been racked at all. Drink from 2028-2033. Tasted Oct 2025.”
