Domaine Violot-Guillemard is a small, family-run estate based in Pommard, with a deep-rooted commitment to low-intervention, organic viticulture and expressive, site-driven wines. The domaine has been practicing organic farming since 2000, and is currently in the process of formal certification with Qualité France. With a history of traditional craftsmanship and minimal manipulation, the wines of Violot-Guillemard speak with quiet precision and unmistakable Burgundian soul.
Often regarded as the pinnacle of Pommard Premier Cru sites, Les Rugiens produces wines of formidable structure and depth. This cuvée comes from 65-year-old Pinot Noir vines planted in a 1.1 acre plot. Vinification balances tradition and innovation: partial whole-bunch fermentation, extended maceration, and aging in a blend of oak and ceramic vessels. The result is a wine of striking complexity and purity—saturated raspberry and cherry fruit layered with notes of white pepper, a whisper of reduction, and well-integrated oak. There’s power here, but also restraint, and a seamless flow from start to finish that marks it as a wine of serious pedigree and aging potential.

“Just a little deeper in crimson colour. Once again, the nose shows a remarkably pure quality of fruit playing with its pepper.
