Domaine Violot-Guillemard is a small, family-run estate based in Pommard, with a deep-rooted commitment to low-intervention, organic viticulture and expressive, site-driven wines. The domaine has been practicing organic farming since 2000, and is currently in the process of formal certification with Qualité France. With a history of traditional craftsmanship and minimal manipulation, the wines of Violot-Guillemard speak with quiet precision and unmistakable Burgundian soul.
In the Pommard, the estate’s hallmark style is unmistakable. Fruit is hand-harvested, fermented with indigenous yeasts, and aged in French oak barrels, with a thoughtful balance between new and neutral wood. The resulting Pommard is structured yet refined, offering a medley of red berry fruit, spice, and earthy complexity, with a fine thread of minerality and a graceful finish that speaks to its origins.
Enjoy this Pommard alongside roasted duck, mushroom risotto, or a board of aged cheeses—pairings that highlight the wine’s depth and quiet power.
“Mid purple, crushed strawberry, an energising nose. I am going back for another sniff. Very peppery on the palate though, and this will take time to harmonise. The fruit quality is lovely!”
